Now this is really quick to make... Finely shred 2 red onions, a couple of celery sticks & a bunch of parsley (without the stalks) and mix with a tin of mixed beans. Make a dressing (3 parts olive oil to 1 part vinegar—cidar or balsamic) with a good pinch of salt. Serve with a leafy salad
