Chana salad
this is so easy, and never fails to impress.
Finely chop a red pepper, an onion & a red chilli (according to taste).
Blend a handful of coriander / parsley with some sunflower oil & mix with a dessert spoon of lemon juice & 1/4 tube of tomato purée & a pinch of salt.
Mix everything together with a tin of chickpeas or 400g of dried pulses that you’ve cooked the night before.
