Quinoa Pepper Pilaf
500g Quinoa, rinsed
1 large leek
2 cloves garlic
1/4 teaspoon sea salt
2 peppers(same or different colours)
1 litre boiling water
Rinse and dry-roast the quinoa with the sea salt, garlic and leeks for 2 minutes, or until it smells nutty. Add the peppers and dry roast for another 2 minutes. Add boiling water and simmer for 5 minutes, or until all the water is absorbed. That's it!
