Sea Thong Thing

A Delicious Thong Thing
Although Sea Thong was used in this recipe it can be substituted for any other sea vegetable such as Arame or Dulse.
Serves 4-6 people


Ingredients

2lb potatoes, cubed & boiled
1pk sea spaghetti, rinsed in colander
2tbs wholegrain organic mustard
2 large red onions
100gramms sunflower &/or pumpkin seeds
Coarse ground pepper, season to taste

How it's done

Should take no more than 30mins from start to finish.
Scrub your potatoes, chop and boil about 20 mins. Meanwhile, dry roast (no oil needed) sunflower & pumpkin seeds in a frying pan or wok on medium heat for a few mins until lightly brown to bring out the taste – put into a bowl.
Chop & dice your onions and ‘sweat’ in a little groundnut or olive oil in your pan on a low heat for approx 10 mins – put into a bowl.
Put the sea thong in the pan with the residue of oil and lightly saute, while its in the pan you can chop it with a spatula – it will turn from brown to a deep green colour. By now your potatoes should be cooked, strain them, put them back into the pan & roughly mash (if your using dry spuds you may want to add a little margarine or oil). Now add all ingredients to mix and stir. Add pepper and mustard to taste.
Enjoy hot or cold!
