Refried beans
450g drained cooked beans
1 red onion, peeled & finely chopped
2 garlic cloves, crushed
2 tbls corn oil
1 rounded dessertspoon margarine
1 tbls water
Heat the oil and gently fry the onion and garlic until soft.
Remove from the heat, add the beans and mash smooth, then return to the heat and add the margarine and water.
Heat while stirring continuously for 5-10 minutes until the mixture is
almost dry.
